Summer Peach

A seasonal release by Juan Puerta from Finca La Sirena, SUMMER PEACH showcases his experimental approach to fruit-driven fermentation. The coffee is carefully infused with peach during fermentation to enhance sweetness and elevate the coffee’s natural stone fruit character without overpowering the cup.

The result is a summer-inspired coffee with notes of ripe peach, apricot, maple syrup, and cocoa, offering a smooth and refreshing finish.

Grown in Armenia, Quindío, Colombia, Juan Puerta’s coffee comes from Finca La Sirena, where experimental processing is central to production. A food science engineer, Juan uses precise fermentation techniques like co-fermentation and osmotic dehydration to create distinct, fruit-driven flavor profiles with heightened aromatics and layered sweetness.

From Juan: “Osmotic dehydration removes water from the coffee cherry while introducing flavor precursors into the bean. The pulped coffee is placed in sealed containers with a concentrated glucose solution, water, and fruit or fruit syrup. Over three days, a pressure gradient drives water out while flavor compounds move in, after which the coffee is sun-dried. The smell is incredible—we focus on enhancing flavor entry into the bean.”. 

In the cup, this approach results in a highly expressive and aromatic coffee experience, where fruit-forward and floral characteristics are amplified through controlled fermentation rather than added flavors, creating a distinct and modern expression of Colombian coffee.
